Instructions
Preheat oven to 400 degrees.
Add 1 tablespoon Mazola® Corn Oil to a cast iron skillet (or heavy skillet) over medium heat. Add turkey sausage and cook until evenly brown. Drain and set aside.
Add 1 tablespoon Mazola® Corn Oil to the same skillet (it is ok if there are still some brown bits from the sausage) and heat over medium heat. Add onion and saute for a few minutes, then add garlic and peppers. Saute until soft. Mix in sweet potatoes. Season with salt, pepper and a few sprinkles of smoked paprika and let the potatoes cook about 7-10 minutes, until they start to soften and brown (during this process, cover the skillet occasionally, this will help the potatoes soften. Remove cover and stir every so often).
Stir in the cooked sausage.
Then use a spatula or wooden spoon to create four wells in the middle of the potato mixture, and break an egg into each well. Season with salt and pepper, then place the skillet in the oven and cook 7-10 minutes (time will vary depending on how cooked you like your eggs...ours stays in our oven about 8 and a half minutes).
