Pimento cheese jalapeño poppers are a Southern spin on a popular party appetizer. This recipe is simple and straight forward with just three ingredients, but packs a flavorful punch.

Ingredients
12jalapeño pepperssliced in half lengthwise, seeds and membranes removed
1cuppimento cheesehomemade or store bought
6slicesof baconcooked, cooled and roughly chopped
Instructions
Preheat oven to 400℉. Line a baking sheet with parchment paper or aluminum foil.
Using a spoon, divide the pimento cheese among the pepper halves, spreading to fill the peppers. Make sure you do not overstuff the peppers.
12 jalapeño peppers, 1 cup pimento cheese
Place the stuffed peppers on the prepared baking sheet, arranging them close together to prevent them from rolling around while baking.
Sprinkle the bacon pieces evenly over the stuffed peppers.
6 slices of bacon
Bake for 15 to 20 minutes or until peppers are tender and cheese is melted and bubbly.
Serve warm.

If any of the poppers explode or leak in the oven, spoon the filling back into the pepper while still warm.This recipe can be made vegetarian by removing the bacon.
