Ingredients
For the peach simple syrup:
2ripe peachespeeled and diced
1cupwater
¾cupsgranulated sugar
For the cocktail:
½fresh lemon
6 to 8fresh mint leaves
4ouncespeach simple syrup
4ouncesbourbon
Ice cubes
1 to 2ouncesginger beer
Peach slices and fresh mint sprigs for garnish
Instructions
Make the peach simple syrup:
In a small saucepan over medium heat, add the peaches, water, and sugar. Stir occasionally as the mixture heats to dissolve the water.
2 ripe peaches, 1 cup water, ¾ cups granulated sugar
Bring the mixture to a brief boil. Reduce the heat to medium low and simmer for 15-20 minutes.
Remove the pan from the heat. Cover and allow the syrup to steep as it cools.
Once cool, strain through a fine mesh strainer or cheesecloth. Store in an airtight container in the refrigerator for up to 2 weeks.
Make the cocktail:
Into a cocktail shaker, squeeze the juice of half a lemon. Add the mint leaves, peach simple syrup, and bourbon. Fill the cocktail shaker with ice, close, and shake vigorously until the ingredients are combined and the outside of the shaker is cold.
½ fresh lemon, 6 to 8 fresh mint leaves, 4 ounces peach simple syrup, 4 ounces bourbon, Ice cubes
Fill two rocks or collins glasses with ice. Strain the cocktail shaker mixture over the ice, dividing between the two glasses. Top with the ginger beer. Garnish with fresh peach slices and mint sprigs. Enjoy!
