Ingredients
1cancoconut milk13.5 ounces
1cancoconut cream13.5 ounces
3 to 4cupsfrozen pineapplesee notes
1/2cuprum
Iceas needed
Pineapple juice to taste
Splash of Grenadinefor serving
Splash of Blue curacaofor serving
Firecracker popsiclefor serving
Instructions
Blend coconut milk, coconut cream, pineapple, and rum until well combined.
1 can coconut milk, 1 can coconut cream, 3 to 4 cups frozen pineapple, 1/2 cup rum
Add ice to thicken as needed. Taste and add a splash of pineapple juice if needed.
Ice, Pineapple juice
Pour into glasses. Slowly add a splash of grenadine, followed by a splash of blue Curacao for a layering effect. Be careful not to add these too fast or they will mix and turn the drink purple.

Top with firecracker popsicle for garnish.

Notes
You can use premade pina colada mix if you prefer.
Freeze fresh pineapple, drain 2 cans diced pineapple and freeze, or use frozen pineapple from your grocery store's freezer aisle.
