Grilled vegan guacamole is an easy homemade guacamole recipe that is fresh, flavorful and a perfect appetizer or party dip for your next fiesta!

Ingredients
3hass avocadoshalved & pits removed; keep skins on
1large tomatohalved (or 2 Roma tomatoes)
1red onionsliced into thick rings
2jalapeñoshalved; for less heat, remove ribs and seeds
1limehalved
2 to 3garlic clovesminced
1teaspoonground cumin
1/4 to 1/2cupfresh cilantrochopped
salt & pepper to taste
Instructions
Preheat grill or grill pan over medium-high heat. Lightly grease the grates; alternatively, you can brush a light layer of olive oil over the cut sides of the sliced vegetables.
Place the avocado halves on the grill cut-side down. Grill for 2-3 minutes, or until you get nice grill marks. Remove to a cutting board to cool.

Repeat with the remaining vegetables, grilling the tomato halves and onion slices for 2-3 minutes each and the halved jalapeños and lime for 1-2 minutes each. Set all aside with the avocados to cool completely.
1 large tomato, 1 red onion, 1 lime, 2 jalapeños
When the vegetables have cooled, scoop the flesh of the avocados into a large bowl. Mash with a potato masher or the back of a fork until they reach your desired consistency.
Dice the onions, tomato, and jalapeños; add to the bowl with the avocado along with the garlic and cumin. Stir to combine.
2 to 3 garlic cloves
Squeeze the juice from the grilled lime halves into the bowl and stir to combine.
1 teaspoon ground cumin
Add the cilantro, then season with salt and pepper to taste.
1/4 to 1/2 cup fresh cilantro, salt & pepper to taste
Serve with crispy tortilla chips for maximum dipping!
Notes
You can substitute lemons for limes in this recipe.
