Ingredients
Two to three pounds baby back ribs
For the sauce:
3/4cupketchup
2/3cupCoca-Cola
1/2cuphoney
3clovesgarlicminced
2tablespoonapple cider vinegar
2tablespoonsDijon mustard
1teaspoonWorcestershire sauce
1/2teaspoononion powder
1/2teaspoonsmoked paprika
1/4teaspoonfreshly ground black pepper
For the rub:
1/2tablespoonssea salt
1tablespoonground mustard
1tablespoongarlic powder
2teaspoonschipotle chili powder
Instructions
Preheat the oven to 300 degrees.
Make the barbecue sauce: combine the ketchup, honey, garlic, apple cider vinegar, Dijon mustard, Worcestershire sauce, the onion powder, smoked paprika, black pepper and Coca-Cola in a saucepan.
Whisk together until combined. Heat over medium heat, bringing the mixture to a boil then reducing to a simmer over low heat.
Cook for until thickened, about 30 minutes stirring occasionally.
Remove from the heat and cool to room temperature. Store in a jar or sealed container in the fridge for up to 2 weeks.
While the sauce is simmering, place each rack of ribs on a doubled sheet of aluminum
foil. In a bowl, whisk together onion powder, smoked paprika, pepper, salt, ground mustard, garlic powder, and chipotle chili powder. Rub the mixture all over both sides of the ribs.
Wrap the ribs in the aluminum foil. Place the racks on a baking sheet and put them on the center rack in the oven. Bake for 2 1/2 to 3 hours.
Grill the ribs: Heat the grill to the highest setting and remove the ribs from the foil. Gently pour the juice in the foil packets into a large bowl or measuring cup, and whisk in 1/4 of sauce.
Place the ribs on the grill and cook for 10 to 12 minutes, until they are charred and slightly crisp on the outsides, basting with the sauce on top.
