2packages frozenchopped spinach, thawed and thoroughly drained of water
1egglightly beaten
1/2cupshredded sharp cheddar cheese
1/4cupgrated Parmesan cheese
For the filling:
4eggs
3egg whites
1cupshredded mozzarella cheese
1tomatosliced
1/4cupbasil
1/2onion chopped
Instructions
For the spinach crust:
Preheat the oven to 425º F.
In a large bowl, mix everything together until well combined. Coat a cast iron pan with oil spray or olive oil and cover the bottom with the spinach mixture. Bake for about 17 minutes until spinach crust is set, firm and slightly browned on top and edges. Remove from oven and set aside.
Lower the oven's temperature to 375º F and prepare the quiche filling.
For the filling:
In a large bowl, mix all of the ingredients, except tomatoes, together and pour on top of spinach crust. Layer top with tomato slices and a sprinkling of parmesan cheese. Bake for 30 minutes — or until the quiche is set and fluffy.
