Ingredients

cups
seedless watermelon
small diced
1/2
cup
red onion
diced
1
green bell pepper
diced
1
red bell pepper
diced

yellow bell pepper
diced
1
jalapeño pepper
diced, seeds and ribs removed
1/2
cup
cilantro
roughly chopped
juice from
1
large lime
2
tablespoons
honey
Salt
to taste
Instructions
Place watermelon in a strainer over a mixing bowl and allow to sit for 15 to 30 minutes. The watermelon will naturally give off some juice as it sits.
2 cups seedless watermelon
Transfer the watermelon to a large mixing bowl. Discard the collected juice or save for a different use.
Add the diced onion, peppers, and cilantro to the bowl with the watermelon. Gently stir to combine.

1/2 cup cilantro,
1 jalapeño pepper
Add lime juice, honey, and a pinch of salt. Stir to combine. Taste and add more salt as needed.
