If using vanilla beans, split the pods in half lengthwise using a sharp paring knife. You do not need to scrape the beans out of the pods. Add the alcohol to 1 quart-size jar. Add the vanilla bean pods or cinnamon sticks, submerging in the alcohol. Store in a cool, dry place for 1 to 2 weeks, shaking the jars occasionally to mix the spices. Taste after one week to determine flavor intensity. The whiskey is done infusing when it tastes good to you.
4 whole vanilla beans, 3 cups rye whiskey or bourbon
To make the cocktail:
Add the apple cider to a medium saucepan or pot over medium-high heat. Add cinnamon, cloves, and star anise to the pot and bring to a boil.
5 cups apple cider, 1 cinnamon stick, 3 whole cloves, 2 star anise pods
Once boiling, reduce heat to medium low and simmer for 5 to 10 minutes.
Remove cider from heat and strain into a thermos or a pitcher.
For each cocktail, add 1 cup of the spiced cider to a heat-safe glass or mug along with 2 ounces of the infused whiskey.

Garnish with a cinnamon stick if desired.

Notes
You do not need to make your own infused whiskey for this recipe. Feel free to purchase it already flavored at your local liquor or grocery store.If you prefer a cold apple cider cocktail, allow the spiced cider to cool completely. Shake the cooled cider with the whiskey in a cocktail shaker or pour over ice and stir with a bar spoon.
