A Corona float is a Corona cocktail spin on one of my favorite summertime treats featuring cold Corona beer, homemade lime granita and pineapple juice.

Ingredients
2 12ouncebottles of Corona Extra®
2-3scoops homemade lime granita
Splash of pineapple juice
For the granita:
¾cupssugar
1-1 ½cupsfreshly squeezed lime juice
1teaspoongrated lime zest
3cupswater
Instructions
To make the granita:
In a small saucepan, combine sugar with 3 cups water and bring to a boil.
Reduce heat and simmer for 5 minutes.
Cool for 1 hour.
Stir in lime juice and zest.
Pour mixture into a shallow metal cake pan and freeze, crushing and stirring the lumps with a fork every 30 minutes for 2 to 3 hours, or until it has a slushy, granular texture.
To make the Corona floats:
Scoop 2-3 scoops of lime granita into a cocktail or pint glass.
Pour chilled Corona Extra over lime granita.
Top with a splash of pineapple juice.
Notes
You can substitute Corona Light or your favorite lager beer of choice for the Corona Extra.
