Ingredients
1avocadohalved
2eggs
salt and pepperto taste
crumbled baconchopped chives, hot sauce (optional)
Instructions
Preheat the oven to 425 degrees.
Cut avocado in half and remove seed.
Scoop out about 2 tablespoons of avocado, set aside.
Season avocado with salt and pepper.
Place avocado halves on baking sheet, in muffin tins or oven safe ramekins. You want to make sure they are secure so they don't tip over while baking!
Crack eggs and carefully place in avocado. Some egg white may run over and that's ok!
Place baking sheet in the oven and bake for 15-30 minutes, or until eggs are cooked to your preference.
Sprinkled crumbled bacon and chopped chives on top. Top with hot sauce if desired.
