Sweet, sparkling strawberry bellinis are seasonal sippers that would be the perfect party beverage for spring and summertime celebrations like Easter or Mother's Day brunch, baby showers and bridal showers.
Add the halved strawberries to a small saucepan over medium heat with the sugar, lemon juice, and water.
2 to 3 cups fresh strawberries, 2 teaspoons granulated sugar, 1 teaspoon lemon juice, 1 teaspoon water
Bring the fruit mixture to a boil, then reduce heat to low. Simmer for 25 minutes, stirring occasionally to prevent the fruit from sticking to the saucepan, until the fruit has a syrupy consistency.
Remove the pan from the heat and allow the fruit to cool. Once cooled, puree with an immersion blender or transfer to a standard blender to puree until smooth. Store fruit puree in an airtight container in the refrigerator for up to 5 days.
Make the bellinis
In the bottom of a champagne flute or wine glass, add 1 to 2 tablespoons of the strawberry puree. Top with sparkling wine.

Notes
If you prefer sweeter cocktails, add 1 tablespoon of sugar rather than 2 teaspoons.
Other fruits can be used in place of strawberries including peaches, blackberries, blueberries and raspberries. If using peaches, dice before putting them in the saucepan. Other berries can remain whole.
