Equipment

  • 1 stand mixer or electric hand mixer
  • 1 spatula
  • 1 knife
  • 1 cheese grater
  • 1 cast iron pan or casserole dish

Ingredients

  • 16 ounces cream cheese softened
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 2 cups finely chopped jalapeño
  • 6-8 slices bacon cooked and crumbed (about 1 cup crumbled bacon)
  • 1/4 cup sliced green onion plus more for garnish, if desired
  • 1 cup crushed Ritz crackers
  • 1/4 cup butter melted
  • 1/2 cup shredded parmesan cheese

Instructions

  • Preheat oven to 350°F.
  • Using a stand mixer fitted with the paddle attachment or an electric hand mixer, beat cream cheese until smooth. Mix in mayo, cheddar cheese and jalapeño until combined. Switch to a spatula and fold in bacon and green onion and spread into a baking dish (see note above)
  • Combine topping ingredients and sprinkle over the top of the dip.
  • Bake for 20-30 minutes or until hot and bubbly.
  • Garnish with additional sliced green onion if desired. Serve with crackers or tortilla chips.

Notes

If you don’t have a mixer, you can mix everything with a wooden spoon—it will just take a little more work to do it this way.
Feel free to omit the bacon for a vegetarian version.
